Paradise Club Drink Menu

     The Paradise Club Drink Menu is a list of drinks and recipes for them. Post your favorites here!

     KingTut gave me permission to post his "Spinnaker's Kiss" here. This is a sub-section of his The "Sixty Days of KingTut's Sinthetics" Project.

Ye Spinnaker's Kiss
For the banishing of Love Curses

     5 jiggers of Rum
     3 jiggers of Whiskey (or Brandy if ye be a Dandy)
     1 mustard seed
     1 Mexican pepper, hottest ye can find, crushed to a paste
     4 crushed cola nuts
     1 dash of cinnamon, powdered
     2 cherries, whole
     Salt to taste

     Mix all ingredients in tall glass and garnish with cherries.  With 2 or more friends as witnesses, intone "Curse be Gone" in a strong voyse and quaff in a single swallow.

The Spinnaker's Kiss
As prepared by the Pyramid Girls

     5 parts spiced rum
     3 parts brandy
     1 squirt of yellow mustard (cuts the sweetness of the rum and brandy)
     1 dash of extremely hot pepper sauce (OPTIONAL!)
     8 parts Coke Zero or Coca Cola Classic
     1 or 2 healthy sprinkles of cinnamon
     A dash or two of salt to complement the mustard
     2 fresh Bing cherries (garnish)

     Mix all the parts together.  Without the hot sauce this is a surprisingly tasty concoction -- and the mustard is a must.  The hot sauce does give it a kick, but unless you have KingTut's iron stomach, Tabasco is a better alternative.

     Note that you can get a very refreshing treat by mixing the Spinnaker's Kiss with pink lemonade.  We recommend 1 part Spinnaker's Kiss to 3 parts lemonade.

     "The cocktail is as refreshing as its name. The sea breeze cocktail is a refreshing blend of vodka, cranberry juice, and grapefruit juice. Plant your beach umbrella and enjoy this simple drink."

1 1/2 fluid ounces vodka
4 fluid ounces cranberry juice
1 fluid ounce grapefruit juice
1 1/2 cups ice cubes
1 lime wedge

Combine vodka, cranberry juice, and grapefruit juice in a highball glass and stir to combine. Add ice.
Garnish with a wedge of lime




     "Invented in Hawaii in the 1950s, the Blue Hawaiian will have you crooning like Elvis."

1 fluid ounce light rum
1 fluid ounce blue Curacao liqueur
2 fluid ounces pineapple juice
1 fluid ounce cream of coconut
1 cup crushed ice
1 pineapple slice
1 maraschino cherry

Combine rum, blue Curacao, pineapple juice, cream of coconut, and 1 cup crushed ice in blender. Puree on high speed until smooth. Pour into chilled highball glass.
Garnish with a slice of pineapple and a maraschino cherry




     "A variation of the Cape Codder, the Baybreeze is as refreshing as any adult beverage this side of the mojito."

1 cup ice
2 fluid ounces cranberry juice
2 fluid ounces pineapple juice
1 1/2 fluid ounces vodka
1 lime wedge for garnish

Combine ice, cranberry juice, pineapple juice, and vodka in a highball glass.
Garnish with a lime wedge.




     "The real Pina Colada was invented in the Hotel Caribe Hilton in Puerto Rico during the decade of the 1950's. The inventor was a bartender who entered a world competition, and won for this drink. He did not patent the recipe for which reason I am able to make some modifications for your delight."

3/4 cup sweetened cream of coconut
1/4 cup half-and-half cream
1/2 cup pineapple juice
1 cup white rum
4 cups ice
4 maraschino cherries

In a blender, combine coconut cream, half-and-half, pineapple juice and rum.
While blending, add ice a little at a time, until mixture is thick.
Pour into 4 highball glasses, and garnish with cherries.




     "This recipe is excellent for very hot days!"

1 lemon   
1 tablespoon white sugar 
4 slices canned pineapple   
1 (750 milliliter) bottle white wine   
2 cups lemon-lime flavored carbonated beverage   

Wash lemon very well and cut into fine slices. Put in a gallon jar with sugar. Mince pineapple and put in jar. Pour in wine and soda. Mix with a spoon and refrigerate for 2 hours.




     "A simple run-of-the-mill pina colada drink."

1 cup coconut milk
1 cup pineapple juice
1/2 cup rum
4 tablespoons white sugar
8 cubes ice

In a blender, combine coconut milk, pineapple juice, rum, sugar and ice. Blend until smooth. Pour into glasses, and serve immediately.

     "A fruity, tangy mixed drink with vodka. Be careful, it's smooth but strong."

1 cup ice cubes
2 (1.5 fluid ounce) jiggers mango flavored vodka
1 1/2 fluid ounces orange juice
1 1/2 fluid ounces apple juice   
1 1/2 fluid ounces pineapple juice

Fill a glass with ice cubes. Pour in vodka, then orange juice, apple juice and pineapple juice. Stir and serve.




     "Tropical Delight Punch has a delightful flavor and is my all time favorite drink."

1 (64 fluid ounce) bottle pineapple juice
1 1/2 cups coconut rum

In a pitcher, combine pineapple juice and coconut rum. Stir, and serve over ice.




     "Mai Tai - a tropical and fruity rum drink."

1 fluid ounce dark rum
1 fluid ounce amaretto liqueur
3 fluid ounces orange juice
fluid ounces pineapple juice
1 dash grenadine syrup

Fill a 12 ounce glass with ice cubes. Pour in rum and amaretto. Fill remainder of glass with half orange juice and half pineapple juice. Add a splash of grenadine for color.



Non-alcoholic Drinks

Polynesian Watermelon Drink ('Otai)

     " 'Otai' is a fruit drink which originated in Tonga and is usually made as a summertime refreshment. It is a blend of water, coconut milk, and any variety of pulped tropical fruit such as coconut, watermelon, mango, and pineapple but is almost always watermelon as it is plentiful in Tonga. A small amount of sugar may be added, although the recipe is considerably sweet on its own. I lived in Sydney many moons ago and the Polynesian families drank this by the gallons in the summer. Soooo refreshing and yummy! Serve over ice cubes."

1 seedless watermelon, halved and sliced
3 cups water
1 (15.25 ounce) can crushed pineapple
1 (12 fluid ounce) can evaporated milk
1/2 cup shredded coconut
2 tablespoons white sugar, or to taste (optional)
1/2 lime, juiced

Grate watermelon with a fork from the rind into a large bowl, leaving no large chunks. Stir water, pineapple, evaporated milk, and coconut into the grated watermelon. Add sugar; stir until dissolved. Squeeze lime juice into the watermelon mixture.




     "This is my all-time favorite summertime drink. When it's hot and humid and you're totally parched, there's nothing as refreshing, as revitalizing, and as restorative as ice-cold watermelon agua fresco. It's one of life's great drinkable pleasures."

1/2 seedless watermelon
2 cups cold water
1/2 cup white sugar, or to taste
1/2 cup water

Scoop flesh from watermelon half and transfer watermelon to a blender. Add 2 cups cold water. Place a folded towel on blender lid and blend until liquefied, about 1 minute. Strain through a fine mesh strainer into a large bowl to remove fibers. Discard fibers left in strainer. Skim and discard excess foam from juice if desired.

Place sugar and 1/2 cup water into a saucepan over medium heat and stir until water is hot and sugar has dissolved. Turn off heat and let simple syrup cool to room temperature. Stir simple syrup into watermelon juice to taste.

Pour drink into a 2-quart pitcher and refrigerate until cold, at least 30 minutes. To serve, fill tall glasses with ice cubes and pour agua fresca drink over ice. Serve with straws.

Cook's Notes:

Flesh from half a watermelon equals 5 to 6 cups.
Optional: Fill empty watermelon half shell with ice, pour drink into watermelon shell, and serve garnished with a sprig of mint.




     "This non-dairy smoothie was created on a cold snowy day so that I could imagine that I was on a tropical beach somewhere. Lime juice and coconut extract give it a colada taste."

2 cups vanilla soy milk
1 cup fresh pineapple chunks
2/3 cup frozen cantaloupe chunks
1/2 cup soft tofu   
2 tablespoons lime juice   
1 1/2 teaspoons coconut extract   

Blend soy milk, pineapple, cantaloupe, tofu, lime juice, and coconut extract in a blender until smooth.

Cook's Note:
Frozen banana chunks sub well in place of the cantaloupe.

Bushwackers Drink Recipes

List of Ingredients

Bushwacker from St Thomas.
 2 oz Baileys Irish Cream
 1 oz Amaretto
 1 oz Kahlua
 small splash Vodka
 small splash Grand Marnier
 sprinkling Nutmeg
 lots Ice
 Fill blender 3/4 with ice (small cubes best).
 Add a small splash of vodka, a small splash of Grand Marnier.
 Add Kahlua & Amarreto. Fill the blender with Bailey's until liquid is 1/2 inch from top of ice cubes.Mix until smooth. Pour in hurricane glass and sprinkle some nutmeg on top!

 BUSHWACKER – Paradise Point
 We were at Paradise Point in Oct. on the Caribbean Princess, the Bushwackers were great. If this attachment works it is the recipe that they have at the bar.
 2 oz. coconut rum
 6 oz. bailey's
 4 oz. amaretto
 4 oz. kahlua
 2 oz. vodka
 blend with ice, top with whipped cream and nutmeg... serves 4

 BUSHWAKCER - Ingredients:
 4 oz Cream of coconut (CocoLopez)
 2 oz Kahlua
 1 oz Bacardi Black rum
 1 oz Dark Creme de cacao
 4 oz Milk or half and half
 2 cups Ice
 Mixing instructions:Combine in blender, blend until smooth, serves two in 12oz cups

 Pensacola Bushwacker Recipe
 2 oz Coffee Liqueur
 2 oz Coffee Liqueur
 1 oz Dark Rum
 1 oz Creme de Cacao
 Vanilla Ice Cream
 4 oz Half and Half
 Pour all ingredients into a blender (ice cream optional) with two cups of ice, and blend until mixed. Serve in a hurricane glass.

 Coki Beach - Bushwacker
 Equal parts of:
 Rum
 Vodka
 Amaretto
 Kahlua
 Baileys
 Coco Lopez (cream of coconut)
 Blend with ice and top with nutmeg. We usually put an extra shot of kahlua & baileys for an extra kick! enjoy!

 Florida Bushwacker Recipe
 1/2 oz. Bacardi 151
 1 cup Vanilla Ice Cream
 1/2 oz. Bacardi Light Rum
 3 oz. Milk
 1 oz. Cointreau
 1 oz. Coconut Liqueur
 1 oz. Dark Creme De Cacao
 1/2 oz. coconut flavor Rum
 Mixing Instruction
 Combine all ingredients. Blend until smooth. Garnish with chocolate shavings or Hershey Chocolate syrup if desired.
